Tasting Notes

The 2022 Hobo Cabernet Sauvignon is a classic California Cab with a modern, minimal-intervention twist. This wine bursts with aromas of ripe blackberry, cassis, and dried herbs. On the palate, it’s bold yet balanced—showcasing dark cherry, plum, cocoa, and a touch of cedar. The tannins are structured but supple, making for a wine that drinks beautifully now but has the backbone to age gracefully.

Winemaker Notes

Aromas

  • Ripe blackcurrant, blueberry, tobacco leaf, and warm baking spices, lifted by hints of leather and graphite.

Palate

  • Full-bodied and expressive with layers of dark fruit, black olive, bittersweet chocolate, and dusty earth. The texture is smooth and generous with just the right grip.

Finish

  • Long and dry with echoes of cherry liqueur, espresso, and subtle oak spice.

Made with organically farmed grapes from select North Coast vineyards, this wine reflects Hobo Wine Co.’s commitment to sustainability and honest winemaking. No over-extraction, no heavy manipulation—just pure Cabernet character.

Food Pairing Suggestions

This Cabernet Sauvignon pairs perfectly with bold, savory dishes and rich proteins:

  • Grilled ribeye with rosemary and garlic butter

  • Smoky beef brisket or short ribs

  • Black bean burgers with chipotle mayo

  • Portobello mushrooms with balsamic glaze

  • Aged cheddar, Manchego, or gorgonzola

Its structure and complexity make it a go-to for steak night or any hearty meal.

Why We Love It

We love the 2022 Hobo Cabernet Sauvignon for its authenticity and character. It’s a serious Cab that doesn’t take itself too seriously—made with integrity, from sustainably grown fruit, and without the pretension. It’s bold but fresh, layered but drinkable. This is the kind of California red you can open on a Tuesday or cellar for a few years—and it’ll impress every time.

About Kascadia

North American wines, including those from Canada, the United States, and Mexico, have risen to the top of the list when it comes to the world's "new world" wines. These regions have rapidly established themselves as producers of exceptional quality and diverse varietals, challenging the long-held dominance of classic Old World wine regions like France, Italy, and Spain.

"The wine renaissance is here, and it spans from Napa to Niagara!" - VJ Gandhi
