Pearl Morissette Winery

Overview

Pearl Morissette is one of the most sought-after boutique wineries in Ontario, known for its minimal intervention philosophy and Burgundy-inspired wines. Located in the heart of the Niagara Peninsula, Pearl Morissette produces highly allocated wines that balance Old World tradition with New World terroir.

Winemaking Philosophy

The winery is dedicated to crafting wines with minimal intervention—meaning no fining, filtration, or manipulation in the cellar. Grapes are hand-harvested and fermented with native yeasts, resulting in wines that express pure terroir and a sense of place.

The Winemaker: François Morissette

Pearl Morissette is led by François Morissette, one of Canada’s most acclaimed natural winemakers. François trained in Burgundy, France, where he spent nearly a decade working with some of the region’s most respected estates. When he returned to Ontario, he brought a philosophy rooted in terroir expression and minimal intervention.

François believes that wine should reflect its vineyard without manipulation. His approach is to “step aside and let nature speak”—which is why his wines are never fined, filtered, or corrected in the cellar. This philosophy has made Pearl Morissette’s wines some of the most distinctive and sought-after in Canada.
