Maple-Glazed Salmon with Spring Vegetables

As the season shifts and Easter gatherings approach, this dish captures everything we love about spring—fresh flavors, effortless preparation, and a sense of ease at the table. Light yet satisfying, this maple-glazed salmon pairs beautifully with vibrant vegetables, bringing both color and balance to your spread.

Ingredients (serves 4):  

  • 4 salmon fillets 
  • 3 tbsp maple syrup
  • 1 tbsp Dijon mustard
  • 2 cups asparagus & baby carrots (or swap in your favorite spring vegetables)
  • 1 lemon, sliced
  • Olive oil, salt, pepper, fresh thyme

Instructions:

  1. Preheat oven to 400°F.
  2. Whisk maple syrup + mustard; brush over salmon, season with salt & pepper.
  3. Arrange salmon & vegetables on baking sheet, drizzle olive oil, add thyme & lemon slices.
  4. Roast 12–15 min until salmon is cooked & vegetables are tender.

Serve warm with a chilled glass of Rosewood Afternoon 2021 White.
