Celebrate the season with this comforting and elegant lamb recipe, perfect for cozy dinners with loved ones or a festive holiday table. Paired beautifully with a glass of Merlot, this dish is all about indulgence, warmth, and savoring the moment.

Ingredients (Serves 4)

  • 1½–2 lb lamb leg or lamb rack

  • 3 cloves garlic, minced

  • 2 tbsp fresh rosemary, finely chopped

  • 1 tbsp fresh thyme

  • 2 tbsp olive oil

  • Salt and freshly cracked black pepper, to taste

  • 1 cup red wine (Merlot recommended)

  • 1 cup beef or lamb stock

  • 1 tbsp butter (optional, for finishing the sauce)

Directions

1. Prepare the Lamb
Preheat your oven to 400°F (205°C). In a small bowl, mix garlic, rosemary, thyme, olive oil, salt, and pepper. Rub generously over the lamb, ensuring every surface is coated with aromatic herbs.

2. Roast
Place the lamb on a roasting rack or pan and roast for 25–35 minutes, depending on the cut and your preferred doneness (medium-rare is ideal). Let the kitchen fill with the comforting scent of rosemary and garlic.

3. Make the Jus
While the lamb rests, deglaze the roasting pan with red wine, scraping up any browned bits for flavor. Add the stock and simmer until reduced by half. For a silky finish, stir in butter at the end.

4. Serve
Slice the lamb and drizzle with the warm red wine and rosemary jus. Pair with creamy garlic mashed potatoes or roasted rosemary potatoes for a truly indulgent meal.
