This is not your typical Sauvignon Blanc. The 2022 Subject To Change Skin Ferment surprises with a glowing golden-orange hue and a boldly aromatic nose. On the palate, you’ll find layers of dried apricot, citrus peel, white tea, and honeyed stone fruit, balanced by savory spice and a gently grippy texture. The finish is dry, slightly tannic, and persistent—inviting another sip.

Palate

  • Medium-bodied with complex notes of kumquat, white peach, and chamomile. A slight tannic grip from skin contact adds structure without overpowering freshness.

  • Clean, mineral-driven, and herbal, leaving a lasting impression of citrus oil and saline minerality.

Crafted with native yeast fermentation and extended skin contact, this wine was aged in neutral oak and bottled unfined and unfiltered. No sulfur added.
