Tasting Notes

The 2022 Henry of Pelham Baco Noir is a bold and rustic red with signature dark fruit intensity and smoky charm. Aromas of black cherry, blueberry, and toasted oak leap from the glass. On the palate, it’s rich and full-bodied, featuring juicy dark berries, cracked pepper, and a hint of cocoa. A supple texture and mellow tannins lead to a long, spicy finish with notes of vanilla and earth.

Winemaker Notes

Aromas

  • Deep and brooding with black plum, wild blueberry, cedar smoke, and subtle clove.

Palate

  • Dense and concentrated with ripe dark fruit, charred wood, and hints of dark chocolate. A firm yet velvety structure makes this Baco both powerful and approachable.

Finish

  • Long and warming with lingering notes of blackberry compote, spice, and gentle oak toast.

Produced from estate-grown fruit on the Short Hills Bench, this Baco Noir is barrel-aged in American oak to amplify its rich character and smooth complexity.

Food Pairing Suggestions

The robust profile of this wine makes it an ideal companion for hearty, flavorful dishes:

  • Grilled steak or bison burgers with smoked cheddar

  • Pulled pork sandwiches or BBQ ribs

  • Roasted portobello mushrooms or eggplant parmigiana

  • Aged gouda or smoked mozzarella

  • Dark chocolate chili or black bean stew

Baco Noir’s smoky notes and full body pair especially well with grilled and smoked foods.

Why We Love It

We love the 2022 Henry of Pelham Baco Noir for its bold, unmistakable character and incredible versatility. It's a true Canadian original—one of the few wines that showcases Baco Noir at its best. With a perfect balance of fruit, spice, and oak, this wine is a go-to for cool evenings, backyard barbecues, or fireside sipping. A staple in Ontario red wine and a must-try for fans of bold, food-friendly reds.

About Kascadia

North American wines, including those from Canada, the United States, and Mexico, have risen to the top of the list when it comes to the world's "new world" wines. These regions have rapidly established themselves as producers of exceptional quality and diverse varietals, challenging the long-held dominance of classic Old World wine regions like France, Italy, and Spain.

"The wine renaissance is here, and it spans from Napa to Niagara!" - VJ Gandhi
